Protein Coffee Cake (in a mug!)

Protein Cake.. made in a mug? Yes, it’s true!

 

This is the perfect post-workout treat and it takes literally minutes to make!

 

This Protein Mug Cake is the balance of carbs and protein to replenish energy stores and help to rebuild muscle.. and did I mention that it also tastes incredible?! Adding the coffee part is completely optional.. you could add cocoa powder, vanilla, sweetener or just keep the recipe simple and leave it out!

 

P.S you don’t have to work-out to enjoy this ‘healthy cake’ – it makes the perfect snack any time of day.. I’ve even had it for breakfast!

Protein Coffee Mug Cake

Ingredients

  • 25g rolled oats or oat flour
  • ~30g/1 scoop protein powder
  • 1 tsp coffee granules - optional
  • 90ml (1/3 cup + 1 tsp) milk or milk alternative

Instructions

  1. Mix all the ingredients in a deep bowl or mug
  2. Microwave for 2 minutes (if the mixture rises after 1-1.5 minutes just push it back down!)
  3. Eat straight from the mug or tip onto a plate (allow to cool slightly & loosen the edges first before tipping it out) and enjoy with a dollop of yoghurt mixed with white hot chocolate powder (my choice!)

    Sorry to seem daft. Do you make instant coffee and take a tsp from that – you don’t just use the granules?

      Hi! You could try baking it in the oven at 180-200 degrees C for 10-15 mins or you could try heating it on the hob – let me know how it goes!

    Had for breakfast this morning and used chocolate protein powder. Perfect with natural yoghurt and really filling. I think I may reduce quantities next time or even keep some back for a snack. Thanks for sharing on twitter!

    I made this tonight but I used summer fruits protein powder instead… The result… JAM ROLY POLY!! Amazing!! I can’t wait to try this with lots of different flavours!!

    Nic, I had this for BREAKFAST this morning – felt so naughty but it’s not! Tasted absolutely amazing and was ready in minutes. I had it with some quark and berries on the side – amazing recipe and will definitely be becoming a regular on my menu!

    It’s great that this tastes better than an unhealthy sugary pudding – I can have it instead of a naughty pudding as well without piling on the pounds 🙂 thanks!

    Brilliant recipe! Takes 2 mins to do, can have it as a pick me up if your on low carbs and need a sweet fix! I had it with strawberries, awesome!

    I made this super simple recipe for breakfast before my workout this morning and it was fantastic! So quick, easy and super tasty! I used cinnamon instead of coffee for a twist and served it with Total Greek Yoghurt, honey, blueberries and banana. AMAZING! Thanks Nic! xxx

    I tried this with a couple of teaspoons of low calorie hot chocolate as I don’t have any protein powder. And I used coconut milk. Tastes delicious but isn’t very solid like some of the pics on here. Do you think it needs the protein powder to make it more cake like?

      Yes it does.. Maybe add some xanthan gum (you can find that in the free-from aisle – it’s a vegetarian thickener.. just add a small amount though!) x

    If you’re careful with the amount of liquid, this is also a great way to make a big bowl of cake-y porridge to enjoy in the morning. As long as it’s got the protein powder and enough oats, it seems to work made with espresso, soy milk, or water, and even when there are lots of sultanas, almonds and other tasty stuff in there. This recipe was a great find, as I never realised oats + protein powder would do this!
