Healthy Oat & Blueberry Banana Muffins

Healthy banana and blueberry muffins

These oat, blueberry and banana muffins are delicious, and you would never guess that they are healthy and good for you too!

 

These muffins are gluten free (make sure to buy gluten free oats if required), contain no refined sugar and are literally bursting with antioxidant goodness thanks to the blueberries and bananas (antioxidants are the things that keep us healthy).

 

Perfect for breakfast or even a snack, these healthy muffins are super juicy & moist thanks to the mashed bananans and berries. I’ve also used strawberries instead of the blueberries which tasted delicious too!

Oat & Blueberry Banana Muffins

Ingredients

  • 2 ripe bananas (mashed)
  • 250g oats (125g of which blended into oat flour*)
  • 1 egg
  • 3 tbsp honey
  • 1 tsp vanilla extract
  • 150g blueberries
  • 185ml milk
  • 1 tsp cinnamon, pinch of salt, 2 tsp baking powder
  • 3 tbsp vegetable/rapeseed oil

Instructions

  1. Pre-heat your oven to 180 degrees C (350 F)
  2. Mix together the oats & oat flour with the baking powder, cinnamon & salt
  3. Add the mashed bananas & stir with a fork before mixing in the blueberries (gently!)
  4. Whisk together the honey, oil, egg, milk & vanilla before folding into the mixture until all of the dry mixture is coated
  5. Divide into 16 silicone muffin cases** or greased paper muffin cases (to prevent sticking.. 1 cal spray oil works for this)
  6. Bake for ~25 mins until cooked (a tooth-pick should come out clean!).. then allow to cool!
  7. Enjoy! These muffins can be kept in the fridge or in a cool cupboard. They can also be frozen for later.

Notes

*To make oat flour simply blend the oats in your blender for a few moments.

**I've been asked where I bought my single silicone muffin cases from.. the answer (like always!) is Amazon!

    Made these this morning, I swapped vegetable oil for melted coconut oil and I’m happy to report they are delicious; so delicious infact that I can’t stop my 2 year old eating them!!!

    Broken my Nics virginity making my first recipe……simple to make and taste great. I would possibly like to try a healthier alternative to the vegetable oil if possible? Also silicone cases are a must and possibly the bananas I used were too large. I need to try more recipes!!

      Wahoo! Vegetable oil is a source of mono unsaturated fat which helps to lower the bad cholesterol (LDL) & doesn’t effect the good cholesterol (HDL) .. It’s the most heart friendly oil around with the biggest amount of long term evidence to back it up. Aka more of a Mediterranean diet! Hope this makes you less afraid to use it!! It’s only a small amount for 16 buns!

    I am just making some more muffins, but have used cooked Bramley apples instead of
    bananas. I didn’t have blueberries so have used 225g raspberries & 75g dried cranberries. I always double the quantities too!

    These are just beautiful. I accidentally left out the vegetable oil first time and they turned out lovely. I have adapted the recipe slightly now, I add 50g of vanilla protein powder and I still don’t add the vegetable oil, instead I use a teaspoon of organic coconut oil also i blend the banana, egg, almond milk, honey, vanilla essence and coconut oil before adding it to the dry mix.

    I’m confused about the oats and oat flour…is it a total of 250 grams or a total of 375 grams. I only used 250 grams and I’m finding the cooking time to take quite a bit longer than 25 mins. Although the taste is delicious! I also used coconut oil instead of the veg oil and used coconut milk instead of milk. Definitely a keeper! Thanks!

      Hello! Sorry it is 250g total – half of which is blended into oat flour (optional). Different cookers may have different cooking times, depending on temperature and fan assisted ovens etc. Love your swaps though, thanks for your comment! Nic x

    I just made these muffins for my pre-workout snacks as well as for my hubby’s breakfast this week! We taste tested them as soon as I got them out of the oven. They tasted yummy!!

    Instead of Vegetable Oil, I used Coconut Oil. I also added about two tablespoons of Flax Seed Meal to the recipe 🙂 The pic of the muffins in Teddy Bear cups was mine. Thank you for posting it, Nic!

    I made these yesterday – they are so yummy! Quick and easy to make, i think it took less than 10 minutes to put the ingredients together. They are quite heavy so it’s quite easy to fill up on 1 or 2. I’ll be making more and taking them to work with me as snacks 🙂

    I love these.. And there great for getting my parents to eat healthy too.. I blend all oil egg bananas and all the wet ingredients in a blender and then last add the blueberries and they come out perfectly with less mess made in the process! X

    Hi Nic, wow I just made there and they are awesome. I thought I had gone wrong as I used frozen blueberries and the mixture looked really sloppy but I just got them out the oven and they are incredible. The whole house smells amazing and all my housemates have had one and loved it. Thabks

    Great recipe! I was able to take these to my little girl’s pre-school today for her 2nd birthday. I substituted rice milk for cow’s milk, so they were gluten-free dairy-free nut-free sugar-free extra yummy!

    I’ve finally got round to making these, I used coconut oil instead of olive oil and almond milk instead of milk though! I had to try one as all good chefs do and they are delicious, they’re already in my meal plan for the week.
