No Bake Healthy Cookie Dough Bites

These ‘no bake’ ground-almond, peanut butter (or PPB!) & chocolate-chip cookie dough bites are not only super healthy but taste AMAZING!!


They are easy to make and can be stored in the fridge for when ever you have a sweet-tooth craving!


Nuts such as almonds provide a variety of key nutrients that help promote a healthy body, including the essential fat ‘linoleic acid’, thiamine, vitamin E, magnesium & calcium.


I made these cookie dough bites with PPB (powdered peanut butter, available from Amazon) and found the chocolate variety to produce the richest flavour (they tasted like truffles!). So if your tooth isn’t as sweet as mine, go for the original or stevia variety or stick with regular peanut butter 🙂

Healthy Cookie Dough Bites


  • 1/4 cup (55g) chickpeas or white beans*
  • 1 cup (100g) ground almonds
  • 3 tbsp xylitol**/stevia
  • 1 tsp vanilla
  • 3 tbsp peanut butter
  • 2 tbsp dark chocolate chips


  1. Add all of the ingredients, except the chocolate chips into a food processor & blend until smooth
  2. Scrape out the mixture into a bowl & add in the chocolate chips with your hands
  3. Scoop out a heaped tablespoon of the mixture and roll into a ball with damp hands. Repeat until all of the mixture has been used up (I made 15 ball shapes)
  4. Pop onto a plate lined with grease proof paper & chill in the freezer for 20-30 minutes before enjoying or storing in the fridge for later!


*I used tinned chickpeas/cannellini beans – drained

*Xylitol is a healthier alternative to sugar

    I’ve had a sugar craving all day and these have kicked it into oblivion!
    Was just about to pop to the shop when this recipe came up on Twitter, so glad I tried it instead. I ran out of ground almonds so substituted half for coconut flour and it worked a treat. Thanks for posting!

    These are absolutely delicious! Doubled the recipe so I had a batch for me (with Lindt 99% choc chips) and a batch for my little boy with raisins. We both loved them – can’t see them lasting more than a few days!

    I used bits from this recipe and the protein balls recipe and created something special. Nic these are ridiculously tasty!

    I used only 50g of ground almonds.and used 50g whey protein to boost the protein intake. I didn’t have any white beans or chickpeas so I just used more peanut butter. It tasted amazing. Love these. Love this recipe. Love your site!

    Hey Nic!
    As you know, we didn’t have all the ingredients. Replaced vanilla with almond essence and peanut butter with almond butter. What we ended up with, was what can only be described as Marzipan! 🙂 My boyfriend and 7 year old were in heaven! Like guilt-free marzipan with dark chocolate! Thank you again! These are the perfect after school treat for my little one.

      For a few days at least.. over a week ?! .. however long you can make them last 😉 ?! Hehe! Substitutes may release their energy more slowly/have added nutrients 🙂 xx
