Quark Pancake Recipe

Quark is a fantastic baking ingredient and as a bonus, it’s low in both calories and fat and is high in protein. Protein helps us to feel fuller longer and it is essential for our bodies to grow and repair (we never stop doing this!).

I thought I’d experiment with Quark in a pancake recipe (as I know you all love pancakes!!) and the end result was super delicious.. the perfect base for maple syrup, blackberries & another dollop of Lemon Quark!

Quark Pancake Recipe

Ingredients

  • 2 eggs (separated)
  • 50g Quark (I used Lemon flavour*)
  • 80ml milk (I used skimmed)
  • 100g wholegrain flour (I used Spelt)
  • Pinch of salt
  • 1/4 tsp baking powder
  • Plus your toppings .. I used Lemon Quark, Blackberries & Maple Syrup!

Instructions

  1. Whisk the egg yolks before adding the quark, milk, baking powder and salt and whisking again
  2. Sprinkle in the flour and whisk again
  3. Whisk the egg whites in a separate bowl before folding into the rest of the mixture (use a metal spoon for this so you don't lose any air!)
  4. Spray a non-stick pan with 1 cal spray oil (or use 1 tsp of coconut/vegtable oil) and cook 1/6th of the mixture for 2 minutes before flipping and cooking for a further minute
  5. Serve & enjoy

Notes

*If you use plain Quark then add either a tsp of lemon juice, vanilla, cocoa or cinnamon for flavour!

    I recommend everyone try this recipe as there the yummiest healthy pancakes I’ve tastes. In fact they taste as good as naughty pancakes.
    I made mine on Sunday, had with quark and strawberries. I saved some of the mixture for today, made them in morning and ate them at work. No excuses now for not eating clean. It’d be good if we could post food photos on here.x

    Pancakes r easy to make and so yummy only difference I used gluten free flour. I had my Pancakes with yogurt berries and flaked almonds 🙂

    Made these on Sunday for breakfast and they were so tasty and really quick and easy to make! I added blueberries and maple syrup – yummy! Will definitely make again 🙂

    I tried these pancakes thinking that they’d be a bit too thick and tasteless but although they were thick they had so much taste, not cardboard like at all considering a few healthy recipes can taste that way. I gave a couple to my husband whom does not like anything too healthy, he polished them off quick sticks. The only problem he had was that the quark (lemon flavour) was very lemon-y and bitter so I whizzed up some strawberries with a pinch of cinnamon and mixed that in with the dollop of quark on top of the pancakes.
    Great recipe and thank you for introducing us to Quark.
    Very filling pancakes, I only managed to eat one before I was full.

    I tried out this recipe yesterday, making a big batch of these. I added a pinch of cinnamon to the batter, which added some sweetness and a lovely flavour. They were so quick and easy to make, and the pancakes were lovely and fluffy.
    I topped them with a squeeze of agave, and some fresh berries- they were absolutely delish!

    Made these yummy pancakes for the first time today! They were easy to make and perfect after gym snack. I used plain quark and a pinch of cinnamon which worked great. Definitely be trying some more Nic’s Nutrition recipes!

    Hi Nic,

    I’m keen to make some banana pancakes tonight and was going to top with Greek yoghurt until I read your article on quark and now I think I might try that instead. I just wanted to ask what the lemon flavoured quark tastes like – does it taste like a lemon yoghurt or is the flavour not as strong as that? I’m keen to have a healthy topping without adding too much sugar, and whilst I know the flavoured quark will have some extra sugar, I don’t mind as long as I don’t have to add sugar/more sweetners to it to make it taste nice or to get rid of the sour taste you get from other cream cheeses. Any advice would be so helpful! Thanks

    Thank you, I looked this up after switching yoghurt with quark in my recipe to see what experiences others have.
    My pancakes are very high in protein
    1 squashed banana
    1 egg
    1 teaspoon of stevia
    2 tablespoons of quark
    1 heaped teaspoon of Peanut butter powder (PB2)
    1 heaped teaspoon of wholemeal flour

    They are also very delicious and healthy 🙂
