Homemade Dark Chocolate Bark

If you’re a dark chocolate lover like me then you HAVE to try this recipe. Having said that though I’m sure if you added less cocoa & more honey then you could make this chocolate bark more ‘milk chocolatey’ than dark. Oh and not forgetting the fact that this recipe is DAIRY FREE too which means that the majority of people should be able to enjoy it (if you’re vegan then of course use something like agave nectar as the sweetener).

 

Chocolate bark is like a fancier/funner way of eating chocolate and the thing that makes it amazing is the fact that you can customise it in whatever way you like – I added a dash of peppermint extract to one batch (found in the baking aisle of Asda!), along with 1 scoop of Mint Choc Chip whey protein, and toppings wise you can have what ever you fancy – dried fruit, nuts, seeds, berries.. the options are endless!

 

To make this recipe all you need is equal amounts of coconut oil (available in most supermarkets now), cocoa and honey (by weight measure) and all you need to do it warm it, mix it, pour it and freeze it! It really is that simple. Then you can break up your chocolate into as many pieces as you like. Just remember that for a thinner protein bark you should use a larger tray (or half of the mixture) and for a thicker protein bark (my fave!) you should use a smaller tray (I used a glass pyrex dish lined with grease proof paper) or more mixture.

Dairy-Free Chocolate Bark with Berries

Ingredients

  • 100g coconut oil
  • 100g cocoa powder
  • 100g honey
  • optional extras e.g. 1/4 tsp peppermint extract
  • toppings e.g. dried fruit* & nuts

Instructions

  1. Add your coconut oil to a pan and heat gently until melted.
  2. Add in the cocoa and mix until combined before adding the honey and any optional extras e.g. peppermint extract and/or whey protein.
  3. Remove the pan from the heat whilst you line a baking tray (that will fit in your freezer!) or dish with grease proof paper.
  4. Pour the mixture into the lined pan and sprinkle on your dried fruit or nuts.
  5. Freeze for an hour, remove and break into pieces (store in the fridge for later or devour immediately!)

Notes

*I used Natural Selection’s Five Fruit Mix which contains a mix of chopped dates, raisins, chopped apricots, dried sweetened cranberries and goji berries. Nutrition stats provided include 100g of this!
