4 Ingredient Healthy Coconut Macaroons

I LOVE food that tastes ‘naughty’ but is actually good for you/not that ‘naughty’ at all and these healthy coconut macaroons are just that!

 

These macaroons are not only totally delicious but are super easy to make too and require just four ingredients; you simply mix, shape and bake, that’s it!

 

The main ingredient is (unsweetened) desiccated coconut which provides fibre as well as MCT (medium chain triglyceride) fats, which are easily digested by the body and more readily used for energy than other types of fats. I love adding desiccated coconut to yoghurt and porridge for added taste and texture too!

Coconut Macaroons

Ingredients

  • 2/3 cup (70g) unsweetened desiccated coconut
  • 1.5 tbsp (10g) ground almonds or PPB*
  • 1 egg white
  • 2 tbsp honey/agave nectar (30ml)
  • Optional: 1 tsp vanilla/cocoa/stevia

Instructions

  1. Preheat your oven to 160 degrees C and mix together the desiccated coconut and ground almonds/PPB before adding the egg white and honey
  2. Mix well before dividing between 6 silicone muffin cases**. Press down the mixture so it's tightly compact
  3. Bake for 17 minutes and allow to cool completely before popping them out and enjoying!

    So easy to make this! Swapped the nuts for flaxseed as have a but allergy and taste great! Maybe on a naughty day would put a little dollop of jam 😉

    Hi Nic, I don’t know how I came across your website but I am so glad I did. Lots of great advice for healthy living and some lovely recipes. Yesterday I had a Nic baking day. One of the items I made was these items was these coconut macaroons. They taste so delicious. My Mum loves coconut so I doubled the recipe and plan to give her some when I visit her later.

    Can I not use the silicon cups? Can I just do it the cookie way, like just dropped it on parchment paper?

      Hey, I suppose you could, but make sure to really pack the mixture together.. otherwise it could fall apart in the oven – let me know how it goes! Nic x

    We love these in our house. They taste amazing and leave the kitchen smelling all coconutty. I melt and drizzle a little dark choc on our macaroons . Thank you for the awesome recipe.

    Hi Nic! I’ve been waiting ages to try these and finally did so this morning. I also added MyProtein’s mocha drops to give a coffee flavour to it! It tasted lovely, but unfortunately they were incredibly dry! 🙁 even my ‘batter’ was so dry I had to add extra whites and some soy milk, thinking it would moisten up.
    Is yours really dry too? My macaroons turned out too dry to eat that I crumbled them up into my homemade granola (yay, no waste!).
    Any idea why they could have been so dry…or is there anything else I could add to it to ‘break’ the dry coconutiness? I’m thinking mashed bananas….what do you think?
