Sweet Potato Protein Brownie Recipe

Would you believe me if I told you that these gorgeous chocolate brownies are actually good for you?!

 

These chocolate brownies are packed with protein, soluble fibre, antioxidants and vitamin A.

They also taste AMAZING and are very diet and weight loss friendly at only 100 calories a piece. Oh and don’t get put off by the secret ingredient.. the humble sweet potato! 😉

Sweet Potato Protein Brownies

Ingredients

  • 400g (2 medium) sweet potatoes
  • 100g dark chocolate chips
  • 2 heaped tbsp (20g) oats
  • 1 scoop chocolate protein powder
  • 3 egg whites
  • 1 tsp honey/agave nectar/freedom
  • 1/2 tsp cinnamon
  • 1/2 tsp baking powder
  • 1/2 tsp rapeseed or coconut oil
  • Optional ingredients: 1 tsp coffee or cocoa, tsp orange zest, dried cranberries or raisins, chopped almonds or walnuts

Instructions

  1. Pre-heat your oven to 180 degrees C (350 F or gas mark 4)
  2. Skin the potatoes, chop into chunks and cook in the microwave until soft (5-6 minutes)
  3. Either mash the sweet potatoes in a bowl or add into your food processor and blend until 'mushy'
  4. Add the chocolate protein powder, oats, cinnamon and baking powder and blend together
  5. Melt the chocolate and coconut oil together (in a microwave - stir every 20 seconds and make sure not to burn the chocolate) and add this to the blender along with the egg whites and honey before blending again. Then stir in any extra ingredients.
  6. Pour your mixture into a lined or greased baking tray (8" by 8") and bake for 30 minutes
  7. Allow to cool & slice in to 12 pieces.

    These are amazing! I didn’t use as much sweet potatoes (I used 1 and a half). I also used coconut milk instead of the oil but they taste so yummy!!! I love how they are gluten free and wheat free, mostly because I’m coeliac and a health freak 😛 Deffo a must try for any choccy lovers out there.

    These are lovely! Substituted the coconut oil with some sunflower oil and they came out delicious. I will endeavour to find some coconut oil though, as I think they’d taste even better then!

    Loved the flavour of these (though might try without the cinnamon and add some chopped pecans next time) but they came out a bit flat! Should I have whisked the egg whites?! I can get LucyBee coconut oil in my local Sainsbury’s – my personal favourite is Viridian but it’s not so handy to buy.

      Hey! I bought the Groovy Food company coconut oil from Waitrose if that helps – £7 I think! Love idea of adding pecans. Mmmmm if they came out a little flat I suppose a little baking powder could help things. Do let me know if you try it – although brownies are meant to be quite compact! I hope this helps! Nic x

    Ok so you’re looking at the recipe and feeling a bit dubious about the use of Sweet Potato, don’t be. These are amazing! Moist, chewy, tasty and healthy too. Seriously, make a batch and you’ll agree!

    I don’t have a sweet tooth and rarely ever eat any desserts or chocolate but was really intrigued by these given the fact they had sweet potato in! I’m trying to get more calories in my diet and struggling to find decent snacks, well I think that problem is solved with these, they taste awesome!

    I’ve added cranberries to mine so far but will try other fruits and nuts and even tempted to see if chilli might work for a bit of a kick?

    Baked these yummy chocolate brownies for the family … Needless to say there wasn’t very many left! The brownies tasted delicious and the added walnuts and raisins really complemented the recipe! Healthy, tasty and a great treat to have during the day without feeling guilty after!:) xo

    I made these last night, wow they are gorgeous! I made a brownie cake as I had left my baking tray in my mums house and it still turned out great. For the dark chocilate I used a few sqaures of the Green and Blacks Maya Gold which added a lovley warm spicy flavour. I also used drinking chocolate powder instead of the protein powder.

    I made these this morning for the first time, I love the recipe and so simple to make. I’m a cakeaholic trying to give up, these make the perfect substitute. I can’t taste the sweet potato what so ever. I’ll be interested to see the difference in the chick pea ones. They’re next on the list along with the over night oats. Love this web sight.
