Frozen Banana & Nut Butter Chocolate Bites

If you’re a fan of my no bake healthy truffles, then you will love this recipe! These delicious frozen bites are packed with goodness and taste so good you’ll never believe that they’re healthy.

These frozen bites make a delicious snack, dessert or pre-workout treat and are a great source of potassium and fibre (from the bananas), healthy fats and protein (from the nut butter) and flavanoids/antioxidants (from the dark chocolate).

You can customise these bites with your chosen nut butter (I used cashew butter) and can even add desiccated coconut for added fibre and healthy fats (make sure to buy unsweetened!).

Cashew Butters

𝐈𝐍𝐆𝐑𝐄𝐃𝐈𝐄𝐍𝐓𝐒⁣ 👩🏻‍🍳 ⁣

✔️ 1 large ripe banana (or 2 small)⁣

✔️ Approx 5 tsp of your favourite nut butter (I used peanut!)⁣

✔️ 100g of dark (or milk) chocolate⁣

✔️ Optional – 3-4 tbsp of desiccated coconut⁣

 

𝐌𝐄𝐓𝐇𝐎𝐃⁣ 🥣 ⁣

1️⃣ Slice up your banana (a large banana will give at least 20 chunks) & lay half of the banana chunks on baking/greaseproof paper on a flat surface e.g. a baking tray/ plate.⁣

2️⃣ Spoon approx ¼-½ a tsp of your nut butter on top of the banana slices laying on the paper.⁣

3️⃣ Top with the remaining banana slices to make 10 x little ‘banana & nut butter sandwiches’⁣.⁣

4️⃣ Place in the freezer for at least an hour (I covered the banana chunks lightly with greaseproof paper just to protect them from any falling ice!).⁣

5️⃣ Melt your chocolate in the microwave for around 1-1.5 minutes, stirring every 15 seconds to avoid burning (use 1 piece of chocolate per banana chunk).⁣

6️⃣ Dip your banana pieces into the chocolate & roll (do this quickly so that the banana doesn’t start to melt) using a spoon to move around the banana slices in the melted chocolate⁣.⁣ Rolling in coconut too is optional! 🥥 

7️⃣ Place the chocolate covered banana chunks back on the grease proof paper and freeze for 2-3 hours before serving or keep in the freezer until a chocolate craving kicks in!⁣

    I made these as a Sunday night treat and they were absolutely delicious! Super easy to make too. the only downside was having to share them 🙂

    These were so easy to make! And perfect to keep in the freezer for when I fancy a treat. They’re quite rich so one is enough to satisfy a craving, and eaten straight out of the freezer means they last longer! Great, simple, healthy recipe!

    Yum, just polished mine off! The kids adore them, literally over anthng else!! I find it easier to slice the banana lengthways, dab each cut side with kitchen towel then spread on the nut butter, sandwich and freeze whole. I then sliced it from frozen. I found the other way the slices were so skippy I got in a real mess!

    Made these amazing banana nutty chocolatey bites for a healthy homemade dinner party dessert. They were really simple to make, but so delicious. Used green and blacks 85% and PB. Going to make with almond butter next time. Thanks Nic x
