2 Ingredient Pancakes (gluten free & dairy free!)

I love pancakes, and when I heard aboutย ‘2 ingredient pancakes’, I knew that I had to give them a go!

This is seriously the EASIEST pancake recipe in the world, as it’s made from just two ingredients.. bananas & eggs!

I’ve made these pancakes a few times now and have put together my top ‘pancake perfecting tips’ together in this blog post!

2 Ingredient Pancakes

Ingredients

  • 1 medium-large banana
  • 2 whole medium eggs
  • Optional: 1-2 tbsp PPB, cinnamon or chocolate chips!

Instructions

  1. Slice the banana into a bowl and mash with a fork, potato masher or a hand blender (the easiest!)
  2. Add the eggs and mash into the banana until you have a smooth 'batter'
  3. Heat some oil in a non-stick pan (I used coconut oil in a small, flat pan which meant the mixture didn't stick or spread out too much!) and pour a small amount of the mixture in, to create your pancake shape!
  4. Cook on a low-medium heat (I used heat 4 out of 9) until you are able to flip it (with a spatula) and cook on the other side (this takes a few minutes)
  5. Repeat for the rest of the mixture & serve the entire batch with your chosen topping before enjoying!

Notes

Do let me know if you try them & what toppings you choose! - my choice is always yoghurt, frozen berries & cinnamon! ๐Ÿ™‚

Makes a few pancakes (depending on the size of them!) for one person; nutrition stats are for the whole batter!

    I love these! I made them with grated apple too and they were lush. I made some in the evening then put them in Tupperware and took them to work in the morn – just heated them up in the micro! Winner.

    These are so good, I mad them again this morning but instead of using 2 whole eggs I used one egg and 2 egg whites! Perfect for my nutritional needs! X

    I made these for myself and my boyfriend (who is a sugar demon) and I have to say that they are delicious! I love the fact they are so easy to make and don’t contain lots of expensive ingredients. We have put these at the top of our list for breakfast and plan to make the Greek yoghurt pancakes next weekend ๐Ÿ™‚ Nic definitely knows what she is doing when guiding people towards a healthier lifestyle!

    I made these for myself and my mom, but using egg white with mashed banana, im vegetarian and I live by a strict diet and have soya milk/ soya yoghurts and I don’t like eggs or the yellow bit in it but by using egg white and tiny bit of soya milk instead it tasted lovely.. we served the pancakes with soya yog at the side, handful of blueberries/raspberries and a drizzle of honey.

      Oh no! So many people have had success with this recipe – perhaps your banana wasn’t big/ripe enough! They are usually so sweet, had them this morning ๐Ÿ™‚ x

    Must admit, I was really sceptical when I saw the minimal ingredients for these pancakes but I decided to give them a go this morning.
    Can’t believe I didn’t try them sooner!
    These are definitely my new favourite, especially when drizzled with Walden Farm’s Caramel Syrup.

    Just wondering, do you think they would keep overnight? As in, would I be able to make them at night time, pop them in a lunch box and they be ok for the morning? I’ve just started the paleo diet and am getting sick of eating egg muffins haha, thought these would be perfect for me for breakfast but I don’t have time to make and eat them before work?     Iโ€™m not sure if iโ€™m just really impatient, but these seemed to take ages to cook. I used only one large egg as my banana was small, maybe thatโ€™s why? They were also quite hard to flip in one piece.
