Cookies.. made from black beans?! Yes, it may sounds crazy but DON’T knock it until you’ve tried it!! These cookies taste amazing and most importantly, are full of super healthy ingredients and are quick & easy to make.
Straight out of the oven these cookies are super soft (and totally yummy, take it from me!!), but once cooled (and stored in the fridge), they firm up to become the most beautiful chocolate bites ever.
Black Bean Cookies
Ingredients
- 1 tin black beans* (240g drained weight)
- 2 tbsp nut butter - I used peanut butter
- 2 tbsp milk of your choice
- 2 tbsp coconut or olive oil
- 2 tbsp oat flour (blended oats)**
- 1/2 cup (125ml) xylitol***/sugar/stevia
- 1 tsp vanilla
- 1/4 tsp cinnamon
- pinch salt
- 1 tsp baking powder
- 3 tbsp cocoa powder
- Optional - chocolate chips, coconut flakes, chopped nuts
Instructions
- Pre-heat your oven to 175 degrees C and add the black beans (drained and rinsed) to your food processor along with the nut butter, milk and oil. Blend until all the ingredients have combined.
- Add the remaining ingredients.. oat flour, xylitol/sugar, vanilla, cinnamon, salt, baking powder and cocoa powder before blending. Stir in any optional ingredients next.
- Spoon the mixture onto a greased baking tray or baking parchment creating 12 cookie shapes before baking for 20 minutes.
- The cookies will come out slightly soft so allow to cool slightly before transferring to a cooling rack and allowing to cool completely.
- Step 5
- Store the cookies in the fridge and enjoy, guilt free
Notes
*I found black beans in Morrisons – My local Asda didn’t sell them!
**To make this recipe gluten free use gluten free oats.
***I used xylitol

Hi Nic, these look amazing! I’ve got a nut allergy though – is the nut butter essential or could I make without/could you suggest an alternative? x

Hi Laura! Great question. A seed butter should work – Like sesame seed? Let me know how it goes! Nic x
Made these today tasted amazing! My boyfriend also loved and didn’t tell him that there were black beans in them! You cant taste them at all! I added roughly chopped hazelnuts to mine. Will use a little more milk next time as I couldn’t really flatten them out (the mixture will not spread whilst in oven like some cookies do) so mine were more ball shaped but turned out nice! Try them!

Hurray! So glad you liked them Lou! Thanks for your pic and comment – I’ll upload yours now! Perhaps the addition of the hazelnuts made them a little more dry? More milk could definitely be the way to go. Happy baking! Nic x
just made these….and just tasted…..absolutely delicious!!! Only one problem…..they’re so moreish its going to be hard to stop at one!! Love the undertone of peanut butter that comes through. Didn’t have any chocolate chips this time so will add next time to compare. Any healthy oaty biscuit recipes would be greatly appreciated, the boyf has requested 🙂

Hurray! Your request has been heard loud and clear, thank you 🙂 SO happy you liked – and yes, MOREISH is an understatement 😉 hehe xx

Hi Nic, I really want to try this recipe… please can you advise how many grams of stevia to use if I don’t use xylitol? thanks 🙂
Author
Hello! I would use the equivalent of half a cup.. which is 42g according to this chart: http://truvia.com/recipes/conversion_chart .. let me know how it goes! Nic 🙂
Just made these and I’ve eaten 6 of them already as they are so tasty – I served with extra PB and 85% cocoa choc chunks, sprinkles & shavings. All organic too. Thanks for another great recipe! *

Excited to try these! Can the sugar be substituted for a liquid like honey or date syrup? A
Author
Hello! I suppose so yes – I used xylitol as it’s a similar texture to sugar but way healthier. Do let me know if you try them! Nic xx
I absolutely love all your recipes so was very excited to try these! I used honey instead of stevia though and the taste was really good but they turned out so dry? Like it was hard to swallow them.. Do you have any idea what went wrong or which ingredient I could use more/less of to prevent this?

Hi Evellen, aw I’m sorry to hear that – that’s strange as mine were really moist! Did you follow everything step by step? Do you have a hot oven? What oil did you use? Nic x
Made a batch of these on Saturday night and OMG they are the best little chocolate craving fixer-upper ever! the boyf loved them and wouldnt have know they had black beans in them! I added some coonut to mine :o) will definitely make more again and maybe add some protein powder for an extra protein fix!

Hi Nic,
I wanted to make these this weekend and was wondering if coconut flour could be substiuted for the oat flour?
Thanks
Lizzie x

Hello! Coconut flour is a weird one – it absorbs liquid like mad so you may need to add more egg white/milk to the mixture. Let me know how it goes! xx P.s to make oat flour just blend oats in a blender!
Hey 🙂 I’m really excited to try these as the feedback is so good and I get a very sweet tooth! I was just wondering if you don’t have a food precessor, do you think it would work in a normal blender or even a hand blender? Thanks!
Author
Hello! Food processors are so cheap (£20!) and so useful, but a blender may work – I’m just not sure if the consistency would be the same.. sorry! Do let me know 🙂 xx

I searched high and low in my local (huge!) Tesco and couldn’t find black beans! The closest I could find was black-eyed beans. I was too scared to try any other bean though in case it didn’t work properly! Any suggestions for bean substitutes? I really want to make these tonight!
