Golden Carrot & Classic Green Juice Recipes

Hello! So in my last blog post I showed you some of my favourite breakfast recipes and in this blog post I thought I’d show you some of my favourite juice recipes as well as a bonus energy ball recipe using the Tribest Slowstar juicer and mincer which they have kindly lent me!

 

Using a ‘slow juicer’ in particular, means that you’ll be getting more nutrients in your juice and the end result will be less foamy and won’t separate as quickly (which no-one likes!), and despite the name it actually works super quickly! You can see it in action in my video below:

 

 

I get asked all the time about juicing recipes and in my opinion they’re a great way of using up vegetables and fruits in the fridge, as well as providing a concentrated source vitamins, antioxidants and also soluble fibre. Another bonus is that you can use the vegetables pulp, which contains the insoluble fibre in soups, curry and stews.

 

 

So on to the recipes, and first up is a Golden Carrot Juice; this one of my favourite juices of all time and it really is so warming. It’s also perfect for the winter season as it contains vitamin A which is essential for the immune system.

 

Golden Carrot Juice

Ingredients

  • 3 carrots
  • 1 apple
  • 1/2 an inch of ginger
  • 1/2 a lemon

Instructions

  1. Chop up the ingredients into 2cm thick strips and pop them into your juicer
  2. I personally like the finish with the apple which is really juicy and helps to push everything through.

 

This recipe serves 1 so if you want to make juice simply double or triple the ingredients and don’t forget that you can add the pulp to your favourite vegetable soup!

 

 

My second recipe is a classic green juice which is packed with vitamin C, which is another essential nutrient for the immune system.

 

Classic Green Juice

Ingredients

  • 1 whole cucumber
  • 1 green apple
  • a few celery stalks
  • a large handful of kale
  • 1/2 an inch of fresh ginger

Instructions

  • Chop up the ingredients into 2cm thick strips and pop them into your juicer
  • I personally like the finish with the apple or celery which is really juicy and helps to push everything through.

 

In both of these juice recipes you’ll see that they mainly contain vegetables with just 1 piece of fruit for a touch of sweetness.

 

 

As a bonus this juicer also comes with a mincing attachment and as well as grinding nuts to make almond meal or nut flour it also can make raw energy bites..

 

You can make no bake bites by simply combining dried fruit, such as dates and raisins with nuts such as almonds and cashews which have been soaked in water over night in a ratio of 40% nuts to 60% dried fruit (you could use a food processor for this step too). After mincing the ingredients together I then rolled the mixture into balls and rolled them in desiccated coconut and cocoa powder and let them set in the fridge before enjoying!

 

No Bake Energy Bites

Ingredients

  • 160g nuts e.g blanched almonds or cashew nuts (soaked over night in water)
  • 240g dried fruit e.g. sultanas or dates (or a mixture!)
  • Optional for rolling; unsweetened desiccated coconut and/or cocoa powder

Instructions

  1. Drain the nuts (which have been soaking overnight in water) and pop them through the mincing attachment (or you could use a blender) with the dried fruit and mince/blend
  2. Pull off pieces of the mixture and roll into a ball shape (if the mixture isn't coming together easily then you can refrigerate it for 30 mins to help it to firm up) and roll in your desiccated coconut or cocoa powder.
  3. Pop on a plate and then in the fridge for 30-60 minutes to firm up before enjoying 🙂
