This recipe is a part of a collaboration with Si from The Diet Kitchen – we challenged each other to create a healthy and tasty recipe perfect for Autumn and after I used carrots in mine (to set the orange/Autumnal theme!), Si chose to use pumpkin in his Pumpkin Pie Overnight Protein Oats.

P.S. I’m entering this recipe into Simply Health’s Healthy Smiles recipe competition as it includes 2 out of the 6 recommended foods/drinks to eat for healthy teeth .. Carrots and Ginger .. and it contains 3 if you include the Green Tea that I suggest you drink along side them 😉 (you can check out my favourite Green Teas here!) .. wish me luck!

OMG, yum! Just made these and they’re so tasty! Didn’t quite have enough ground almonds so added a bit of ground cocoa flaxseed, turned out great. Thanks Nic, love your recipes x
