️⃣ PREP – Mince the onion, garlic, ginger and chilli. Dice the smoked tofu & mushrooms into small cubes. Chop the Tenderstem broccoli in half if necessary.

️⃣ Prepare a pan of salted water for your noodles in the bowl. When the water boils, add the noodles & cook according to the packet instructions. Rinse with cold water after cooking and set aside.

️⃣ Meantime, heat the sesame oil in a frying pan/large wok over medium heat. Add onion and cook for a couple of minutes, until it softens.

️⃣ Then add the ginger, garlic, & chilli, and cook for a few minutes, adding a small splash of water if necessary.

️⃣ Add the mushrooms, smoked tofu & 2 tbsp soy sauce to the pan. Fry for 10 minutes, or until the liquid has been reduced.

️⃣ Lastly, add the broccoli, leftover soy sauce & the juice of half a lime. Toss in the noodles and stir over high heat until the broccoli is crisp & the noodles are warm.

Serve it with the remaining lime juice, crumbled peanuts/almonds, and coriander on top. Enjoy!!
