Vegan Tenderstem Broccoli & Mushroom Stir Fry

This stir fry recipe makes a great base to create your own variations with your favourite veggies & even additional tasty plant-based ingredients like peanut butter or coconut milk! It’s also super quick to make making it ideal for a mid-week meal meal.

βœ”οΈ 1 red onion

βœ”οΈ 2 garlic cloves

βœ”οΈ 1 thumb-sized piece of ginger

βœ”οΈ 1/2-1 red chilli

βœ”οΈ 500g mushrooms*

βœ”οΈ 400g tenderstem broccoli

βœ”οΈ 300g beansprouts

βœ”οΈ 1 pack of smoked tofu

βœ”οΈ 400g dried noodles (egg-free)

βœ”οΈ 4 tbsp sesame oil

βœ”οΈ 4 tbsp soy sauce

βœ”οΈ A handful of peanuts/almonds

βœ”οΈ Bunch of coriander

βœ”οΈ Juice of a lime


*For the mushrooms, I used a mix of button, chestnut, nameko and shiitake, but you can swap them for your favourite!

1️⃣ PREP – Mince the onion, garlic, ginger and chilli. Dice the smoked tofu & mushrooms into small cubes. Chop the Tenderstem broccoli in half if necessary.

2️⃣ Prepare a pan of salted water for your noodles in the bowl. When the water boils, add the noodles & cook according to the packet instructions. Rinse with cold water after cooking and set aside.

3️⃣ Meantime, heat the sesame oil in a frying pan/large wok over medium heat. Add onion and cook for a couple of minutes, until it softens.

4️⃣ Then add the ginger, garlic, & chilli, and cook for a few minutes, adding a small splash of water if necessary.

5️⃣ Add the mushrooms, smoked tofu & 2 tbsp soy sauce to the pan. Fry for 10 minutes, or until the liquid has been reduced.

6️⃣ Lastly, add the broccoli, leftover soy sauce & the juice of half a lime. Toss in the noodles and stir over high heat until the broccoli is crisp & the noodles are warm.

Serve it with the remaining lime juice, crumbled peanuts/almonds, and coriander on top. Enjoy!!
