This stir fry recipe makes a great base to create your own variations with your favourite veggies & even additional tasty plant-based ingredients like peanut butter or coconut milk! It’s also super quick to make making it ideal for a mid-week meal meal.

βοΈ 1 red onion
βοΈ 2 garlic cloves
βοΈ 1 thumb-sized piece of ginger
βοΈ 1/2-1 red chilli
βοΈ 500g mushrooms*
βοΈ 400g tenderstem broccoli
βοΈ 300g beansprouts
βοΈ 1 pack of smoked tofu
βοΈ 400g dried noodles (egg-free)
βοΈ 4 tbsp sesame oil
βοΈ 4 tbsp soy sauce
βοΈ A handful of peanuts/almonds
βοΈ Bunch of coriander
βοΈ Juice of a lime
*For the mushrooms, I used a mix of button, chestnut, nameko and shiitake, but you can swap them for your favourite!

1οΈβ£ PREP – Mince the onion, garlic, ginger and chilli. Dice the smoked tofu & mushrooms into small cubes. Chop the Tenderstem broccoli in half if necessary.
2οΈβ£ Prepare a pan of salted water for your noodles in the bowl. When the water boils, add the noodles & cook according to the packet instructions. Rinse with cold water after cooking and set aside.
3οΈβ£ Meantime, heat the sesame oil in a frying pan/large wok over medium heat. Add onion and cook for a couple of minutes, until it softens.
4οΈβ£ Then add the ginger, garlic, & chilli, and cook for a few minutes, adding a small splash of water if necessary.
5οΈβ£ Add the mushrooms, smoked tofu & 2 tbsp soy sauce to the pan. Fry for 10 minutes, or until the liquid has been reduced.
6οΈβ£ Lastly, add the broccoli, leftover soy sauce & the juice of half a lime. Toss in the noodles and stir over high heat until the broccoli is crisp & the noodles are warm.
Serve it with the remaining lime juice, crumbled peanuts/almonds, and coriander on top. Enjoy!!
