Courgette Pizza Boats

First came cauliflower pizza.. then came courgette pizza boats!

 

This super healthy recipe is simple to put together and makes an ideal snack or light lunch. It’s high in both protein and fibre which will help to keep you feeling fuller for longer and it’s literally bursting with goodness from the vegetables (it contains 2-3 of your 5 a day!!).

 

This recipe makes 2 courgette pizza boats (from 1 courgette) which is ideal as a snack.. I actually doubled this recipe for lunch and found it super satisfying!

    Tried this tonight and loved it ! Plus all the variation for toppings keeps it interesting, and great for using up leftovers in the fridge.
