Chickpea Blondie Cookies (& a dip!)

If you’re anything like me then you’ll love to make healthier versions of things like cookies.. and these Chickpea Blondie Cookies are no exception :).

You may have seen on Instagram me posting about a chickpea protein dip (which tastes AMAZING!!), well, here is a version without they whey protein but with the option of baking it into cookies that you can take with you on the go!

The ingredients are super simple and the cookies are packed with soluble fibre and slow release energy. PLEASE though don’t bake these cookies expecting them to taste like Millie’s (gorgeous but oh so naughty!!) .. bake them as a healthy snack that tastes yummy (in my opinion!!) too.

[ingredients]

*I used xylitol which is kind to teeth but coconut sugar (which releases its energy slowly and tastes AMAZING!) would also be lovely!

[method]

*I use this food processor.

**You can eat the cookie dough ‘raw’ with apple pieces or a spoon! – check out the pic below 🙂

    This.Recipe.Blew.My.Mind.

    It’s been a while since I’ve felt THIS excited after eating a decadent, scrumptios and extremely delicious recipe that happens to be healthy as well! My tastebuds were crying of joy after the first spoonful of this magnificent dip. Everyone in my family begged me for more even though I just baked a few out of the batter (I coudn’t resist the urge to use the batter as a dipping sauce for my fruit (like you suggested) and I’ve just recently mixed the other half of the batter with some protein powder and almond butter (PB2 would work divine as well) and the ending result was TO DIE FOR!. I would highly recommend this recipe to EVERYONE! This recipe is not only fast, gorgeous and extremely delicious but highly nutritious as well!! Thankkkkkk youu so much for sharing this amazing recipe! I will be making this quite of in the future!.

    Hey I’m thinking to make these in a couple of days time and I was just wondering if you can use regular cane sugar and how many grams I would need to replace the sweetener you used

            Haha really spam?! These cookies were serioisly amazing! I think I ate most of them! Next time I think I’ll reduce the amount of apple sauce to make them even more crispy as I added in too much by accident! I also used about 80g of sugar but might add less the next time to make it even healthier! Your such a genius for creating this recipe! Xxx

    I just made a batch of these, so amazing! I used agave nectar instead of a powdered sweetener because it’s all I had, and added 1 scoop of vanilla protein powder too. I may have eaten 4 already! I will definitely be making these again, thanks so much for the recipe! Amazing!

    Hi nic,

    Really tempted to try and make these! Just wondering could you use chickpea flour instead? And could you also use stevia as the sweetner instead? Is there a big difference between stevia and xylitol? Thanks!

      Hello! Yes you could use stevia but I’m not sure about the chickpea flour! Maybe add some liquid if you do try it?! Let me know! xx

    Well as a dip this gorgeous! I too added whey protein powder for my Macros. But found when baked a bit cake like? Would this be the powder? Also only had brown sugar and honey. And they weren’t sweet enough so off to buy sweetener. Great website love your recipes. Trying to provide better for you snacks for the family is my quest.
