Thank you for all of your lovely comments, it’s the reason I do what I do 🙂 ..

Here are a little selection..

“I just thought I would take a few minutes to thank you! I have been on a seriously intense weight loss journey recently so far dropped 28lb in 12 weeks and I am feeling incredible for it, I have used soooo many of your recipes and have really got into cooking and enjoying meal times and I cannot thank you enough! I am one of these terrible people who instagram all pictures of my meals to make others jealous (or just really annoyed) and the amount of compliments I have recieved about how incredible they look is unbelievable. People are always quick to hit back with critisism and negativity but very few give credit where it is due, and it is certainly due here, so thanks again : ) “

“Just want to say thank you for such a great website! Since becoming a paraplegic I have learnt that I have to pay much more attention to what I eat now. Your recipes taste fab and are brilliant for helping me to maintain a healthy weight.”

“I just wanted to write you a quick email to say a BIG thank you! You have totally transformed the way I cook, eat and think about food! I’ve been following you on Twitter and Instagram for about a month and have made several of your recipes. All of them I have loved, so has my husband and my little boy. I have struggled with my weight over the years, trying fad diets, losing a bit of weight then putting it all back on plus some. I had my little boy, and also broke my ankle while I was pregnant (long story) but I hit my highest weight ever. I was so down about my weight. I joined the gym 3 months ago, and started to eat as clean as possible, and like I said I found you on Twitter etc and now I eat clean everyday thanks to your wonderful recipes. I can’t thank you enough, I still have more weight to lose but I am def on track. Thanks again”

“I first started following you only a few weeks ago on twitter but i just want to email to thank you for your help during a difficult time….. Your website and tweets have really setteled my [eating] disorder. I’ve calmed down a lot and i’ve begun to love cooking your recipes and i feel so much better about myself. Thank you for everything.”

“Fabulous recipes & advice & nutritional info, thanks so much Nicola, I love your website x”

“I love the advice you give about ignoring the number on the scales… weighed myself this morning and it seems I’ve gained weight when I’m trying to lose it. Before, this would have gotten me down whereas now I can see the changes in my body, I feel better & am much more positive, no longer counting calories as such, just going for healthy options and not worrying about the little things!

“Love your recipes!! Love the fact that you explain the complicated things, I know what things are and why they’re used, also the fact that you post other peoples’ photos of your recipes!”

“Having lost over 5 stones since January you have inspired me so much this year nic and have been a constant support; ensuring I can continue my passion of cooking/baking but in a healthy way. Thank you for an inspirational 2013 nic.”

“Love your site, keep up the great work.”

“I struggle to understand food, having never taken much notice of what I eat over the years. I am also very ‘techy’ so your blog, the App and your amazing visit today has really taught me a lot!!! I cannot thank you enough …. Lost 7kg and now under 100kg thanks to you and myfitnesspal. Best thing is I am not even dieting or going hungry at all!”

Trying to keep a variety in my diet and was stuck for ideas until I came across your page! Heaps of great recipes and tips! Thanks Nic! love your work. Excited to try banana and blueberry muffins!”

“I just wanted to drop you a message to say your website is inspirational.”

“Keep up the good work!! You’re website and recipes are fab, it’s great to see a northern girl with real skills.”

“Your blog has inspired me to start running myself it’s something I have wanted to do for years but never had the motivation to do and well I recently found myself single and in need of a confidence boots but didn’t want to spend lots of the right gear or look a fool in the wrong stuff. Thank you for inspiring me to finally have a go at completing this life goal :)”

“I’m new to your [Facebook] page and just wanted to let you know how great I think it is! I had a bit of an over indulging night Friday and was feeling hungover yesterday and instead of eating a load of junk I watched your video’s and was totally inspired and baked! When my husband had his burger king delivered I tucked into your tasty peanut butter stir fry, delicious. So thank you for sharing your expertise and I will be sure to follow your page, encourage my friends too and continue to try out even more of your recipes.

“Oh wow what a little Gem Nichola’s site is! I’m an ok cook well I can use a packet sauce and a slow cooker anyway but since my Mum had a Stroke just before Xmas last year (she’s still in re hab) and my whole family are on a health kick and as a Mum myself I really wanted to promote healthy eating to my son and not just always be about losing weight!! So I searched Twitter for some people to follow for recipe ideas and found Nichola and her blog and videos and wow the recipes are not only simple but so so yummy the Tuna and Feta Frittas are the most simplist things to make and could include a whole host of different ingredients I served mine with sweet potatoe chips and baked carrott chips with a side of wild rocket so nearly my 5 a day in one meal! My Dad is on his way round after a trip to the Hospital to see Mum tonight to pick up some of them for his own dinner. Looking forward to the “healthy chocolate mousse” I made later from Nichola’s recipe.”

“Loving the website. Great videos & explanations as well as benefits of the ingredients used.”

“Your blog is the best thing I’ve discovered this year 😉 #2014 Yummy healthy food!”

“THANK YOU Nic for sharing Your INCREDIBLE Nutrition, Health, Fitness, Lifestyle gifts, talents, skills, abilities, products and services! I sincerely do APPRECIATE ALL of this from the bottom and the top of MY HEART! ♡ ♡ ♡ ♡ May You have a BEAUTIFUL WEEK in advance!”

” … Your easy to follow recipes really gave me the confidence to experiment with my baking and now I don’t feel so scared in the kitchen, I enjoy my time baking and look forward to it. I even made a christmas cake for Christmas Day! … I just wanted to take the opportunity to thank you for the time that you take in making and sharing these recipes and wanted to share with you the difference they have made in my own life. I am sure there are people in a similar situation as me however it is nice to be acknowledged for the hard work that you put in.”

“I’m a fitteam14er so have been following and using your recipes for about 6 months now! .. My favourites are the January Almonds cookies, the oat and apple breakfast bars, the tuna and feta frittatas, and the chicken lemon risotto went down well this weekend! Cooking is NOT my strong point so thanks for making healthy food easier! “

“Hi Nic. Just a very quick email to show you what your clean eating recipes have helped me achieve!!! Today is exactly one year since I joined the gym, and not long after I found you on Twitter and have been eating your recipes every day since!!! It’s not all about the weight, but I have lost over 5 stone now, I am the healthiest and happiest with how I look for the first time in my life! I’m not where I want to be yet, but thank god I’m not where I used to be! So I just wanted to say thank you! Thank you so much, I love your blog, all your posts on Facebook, Instagram and Twitter, they keep me going! Hope you have a fantastic weekend! Love Jenna xx”

“Hi Nic I just wanted to pop you a little message to say how much you have helped me with having a better balanced approach to nutrition since I last messaged you. My diet was “clean” (ahhh I now hate that word”) and my focus was body building – I forgot why I first fell in love with nutrition and forgot to focus on my health – everyone wants abs and low body fat – right?! Well wrong!! bad advice, over training and not fuelling my body meant my sleep disappeared as did my menstrual cycle! I also found it so hard to gain balance without labelling foods – which I know a lot of girls struggle with. This along with a health scare woke me up. I have followed you for a long time but have recently went through your whole website and have just read your simple healthy eating guide – I would love to hand this out to every single girlie! What really opened up my eyes was your posts on what you ate – I realised I definitely was not eating enough or having enough variance. I have been making your recipes and love the over night oats (with lots of toppings) and can’t wait to make the chocolate granola for breakfasts/snacks. I love your work and just want to say a huge thank you for helping me gain better balance – no more macro/calorie counting and my main focus is to have better health – my energy is so much better already soooo yeah THANK YOU! xxx”  – April 2015 via Facebook.

“Hi Nic. Just wanted to let you know how impressed I am with your web page and your commitment to keeping it updated. It must take you hours and it shows. I’m just starting out as a freelancer and still working in the NHS (20yrs this year!). It is hard but people like you inspire me! Keep up the good work!”

“I’ve just come across your blog after seeing you on BBC Breakfast the other day – love it! And also loved to hear your common sense approach to the sugar debate. ” – January 2016 via Email.

“You’re honest, well informed, realistic, highly skilled & trained and the most beautiful example of practising what you preach; What a stunning advertisement you are. I will be subscribed for life as I’ve not only learnt a lot from you, but my relationship with food is far less clouded and confused, thank you Nic!” – January 2016 via YouTube.

“Hey.. saw you today at Fitfluence.. I don’t usually comment on anything but I thought you deserved a congratulations. I really enjoyed your talk, I did a Biomed degree and am now doing a PhD, so was impressed with your wealth of scientific knowledge. You are also so down the earth, I’m from ‘up-north’ originally and I felt right back at home when you were chatting 🙂 Hope your day was as nice as mine, keep up making people smile!”

Seen the yummy pics of the Acai bowl last week and placed an order for some acai powder straight away!
Made my first bowl tonight following Nics recipie, although it’s not visually perfect it tasted perfect! A yummy recipie, made with a superfood, that satisfies your sweet cravings. ❤️
