As we’ve been lucky enough to have the sun around for a few days this month, I’ve heard more and more people saying they’re a little fed up with making the same salads! Of course, it’s not a given that we have to eat salads in Summer – not if we don’t want to, however our food preferences of course change throughout the seasons and unsurprisingly, we may not fancy spending a lot of time slaving away in a hot kitchen for hours on end!
This salad literally made me feel like I was on holiday, the combination of flavours from the saltiness of the halloumi to the refreshing taste of the watermelon, cucumber and mint was amazing!
I made sure to get some key nutrients in there too with a source of protein from the cheese, 2 portions of your 5-a-day and a slow-release source of energy from the mixed grains to keep you fuller for longer – this is a key component that people often forget, and may wonder why they get so hungry in the evenings after a quick make-shift salad.
𝐈𝐍𝐆𝐑𝐄𝐃𝐈𝐄𝐍𝐓𝐒 (Serves 2)👩🏻🍳
✔️ ½ block halloumi, sliced
✔️ 100g watermelon, cut into cubes/triangles
✔️ 100g cherry tomatoes, halved
✔️ ¼ of a cucumber, diced
✔️ 1 pack of microwavable mixed grains
✔️ 1 pack of mixed salad
✔️ A squeeze of lime
✔️ 1 small handful of mint leaves
𝐌𝐄𝐓𝐇𝐎𝐃 🥣
1️⃣ First, heat a griddle pan on medium/high heat with a couple of sprays of oil and place the watermelon to heat for 2 minutes on each side to lightly char. When done, remove from the pan and place in a bowl in the fridge to cool.
2️⃣ Wash down your griddle pan and repeat the process with the halloumi, once grilled on each side, take off the heat.
3️⃣ Meanwhile, add 2 handfuls of salad to each bowl, and prep your mixed grains according to the manufacturer’s instructions (I used a microwave pack!) – add ½ a pack to each bowl and top with the cucumber & tomatoes.
4️⃣ Remove the watermelon from the fridge and add to the salad, alongside the halloumi, mint leaves and a squeeze of lime to finish! 🍃
