Summer Salads with Fruit

If you’re looking for healthy salad recipes using fruit then you’ve come to the right place! These salad recipes are bursting with flavour as well as nutrients and are perfect for summer lunches or BBQ’s.

 

As you can see [in the video] I’ve collaborated with an amazing YouTuber.. Alyssia from Mind Over Munch to bring you four delicious fruity salad recipes for summer.

 

 

P.S The dressings are optional but taste amazing when added – I only used about 1/3 of the dressing mix on each salad so you can keep the rest of it in the fridge for another time!

 

  • WATERMELON & FETA CHEESE SALAD

Watermelon & Feta Cheese Salad

Ingredients:

  • 1/4 of a large watermelon, chopped into chunks
  • 180-200g light, cubed feta cheese
  • 1/2 chopped red onion
  • Fresh basil leaves – optional
  • Handful of spinach leaves – optional
  • Black pepper
  • Dressing: 3 tbsp olive oil & 1 tbsp red wine vinegar

Watermelon and Feta Salad

Method:

  1. Add all of the ingredients into a large bowl
  2. Mix well
  3. Serve & enjoy the fruity goodness!

 

 

 

  • PRAWN, MANGO & AVOCADO SALAD

Prawn & Avocado Salad

Ingredients:

  • 1 ripe mango, chopped (or buy a pre-chopped one!)
  • 1 ripe avocado, chopped
  • 3-4 spring onions, sliced
  • 2 salad tomatoes, chopped
  • 1/2 cucumber, chopped or spiralized e.g. with a julienne peeler
  • Chilli flakes – optional
  • Dressing: 3 tbsp olive oil, 1 tbsp balsamic vinegar & a dash of lemon juice

Prawn & Mango Salad

Method:

  1. Add all of the ingredients into a large bowl
  2. Mix well
  3. Serve & enjoy the fruity goodness!

    I’ve never used watermelon in salad before. I keep seeing it everywhere with feta, but I’m yet to take the plunge!! The prawn and avocado salad looks soo yummy though!X
