Summer has finally arrived here in England and what better way to celebrate than with a smoothie! I love smoothies as they are super healthy and taste delicious! Smoothies count towards getting your ‘5 a day’ – and this recipe certainly has 2 of those in it! This smoothie is packed with anti-oxidants and will leave you feeling and looking GREAT! – thanks to all those vitamins and minerals 🙂
If you prefer a thicker smoothie then don’t forget to freeze your fruit before hand (e.g. bananas) or buy frozen fruit instead (e.g. berries). Frozen fruit (and veg) contain the same, if not more, nutrients than the fresh versions and have the added bonus that they don’t go off either! The majority of fruit either has a low glyceamic index or load meaning that a) it releases it’s energy slowly or b) it’s mainly made up of water and fibre!
This recipe is made from 100% fruit (as I know some of my readers are either lactose intolerant or simply don’t like milk or yoghurt!), is low in calories, fat-free and tastes delicious. You can easily play around with the quantities of the different fruits in this recipe, but they work together really well.. do let me know if you give it a go![ingredients]
Optional: Chia Seeds / Crushed Ice
*I use between a fifth & a quarter of a yellow melon
**Make sure your apple juice is 100% fruit.. STAY AWAY from ‘juice drinks’ where the main ingredients are sugar and water!

1) Mix 30-40g (1/3-1/2 cup) of oats with the same volume of apple juice, cover & leave in the fridge over-night..
2) The next day top with melon chunks, berries, chopped banana, yoghurt & cinnamon – delicious!!
