Friday Fakeaway Quesadillas!


I love Mexican food, so I wanted to share with you a quick and easy quesadilla recipe that’s perfect for a ‘Fakeaway Friday’ or even mid-week meal!

⁣These quesadillas are a great option to boost your 5-a-day! They also reheat well and taste delicious cold too.

The more colours you can include in your diet, the better when it comes to obtaining a variety of vitamins & minerals. Each colour contains a unique set of phytonutrients (plant chemicals) to support your health!

πŸ… Red – Lycopene gives veggies their red colour and is known to have antioxidant properties to support health.

πŸ₯• Orange and yellow – Orange & yellow vegetables are high in carotenoids, including beta-carotene, which is converted into vitamin A in the body, which helps to produce red blood cells as well as keeping our eyes healthy.

Here’s how to make it, I hope you enjoy!

πˆππ†π‘π„πƒπˆπ„ππ“π’β£ πŸ‘©πŸ»β€πŸ³ ⁣(serves 3-4)

βœ”οΈ 300g chicken breast fillets

βœ”οΈ 3 tbsp olive oil

βœ”οΈ 1 onion

βœ”οΈ 1 bell pepper

βœ”οΈ small can (200g) sweetcorn

βœ”οΈ 300g grated mozzarella

βœ”οΈ 4 large wholemeal tortillas


π’ππˆπ‚π„π’ π…πŽπ‘ π‚π‡πˆπ‚πŠπ„π

βœ”οΈ 2 cloves of garlic, grated

βœ”οΈ 1/2 tsp hot pepper

βœ”οΈ 1 tsp sweet pepper

βœ”οΈ 1 tsp cumin

βœ”οΈ 1/2 tsp dried oregano

βœ”οΈ 1 tsp chilli flakes


πŒπ„π“π‡πŽπƒβ£ πŸ₯£ ⁣

1️⃣ Cut the chicken into narrow strips, approx. 2 cm long and add to a bowl. Season with salt, pepper and all the spices. Pour in 1 tbsp of olive oil, mix thoroughly and set aside.

2️⃣ Cut the onion and pepper into thin slices. Season with a pinch of salt and sautΓ© in a frying pan in 1 tbsp of oil, then set aside on a plate.

3️⃣ Place the chicken in a hot pan and fry for a few minutes or until cooked. Transfer to a separate plate.

4️⃣ Heat a large frying pan and pour in 1 tbsp of olive oil. Place the tortilla on it and place 1/4 of the stuffing over half of it – chicken (without meat juices), sautΓ©ed vegetables, sweetcorn and grated cheese.

5️⃣ When the cheese is melted, use a spatula to lift up one side of the quesadilla & flip it over to the other side as if you were making an omelette (fold it in half!).

6️⃣ The tortilla should by now be browned slightly. If it is not browned, turn the heat up to high and flip the quesadilla over until browned.

7️⃣ Repeat with the other tortillas and the rest of the stuffing.

Serve with salsa, sour cream or guacamole!
