I love Mexican food, so I wanted to share with you a quick and easy quesadilla recipe that’s perfect for a ‘Fakeaway Friday’ or even mid-week meal!
β£These quesadillas are a great option to boost your 5-a-day! They also reheat well and taste delicious cold too.
The more colours you can include in your diet, the better when it comes to obtaining a variety of vitamins & minerals. Each colour contains a unique set of phytonutrients (plant chemicals) to support your health!
π Red β Lycopene gives veggies their red colour and is known to have antioxidant properties to support health.
π₯ Orange and yellow β Orange & yellow vegetables are high in carotenoids, including beta-carotene, which is converted into vitamin A in the body, which helps to produce red blood cells as well as keeping our eyes healthy.
Here’s how to make it, I hope you enjoy!

βοΈ 300g chicken breast fillets
βοΈ 3 tbsp olive oil
βοΈ 1 onion
βοΈ 1 bell pepper
βοΈ small can (200g) sweetcorn
βοΈ 300g grated mozzarella
βοΈ 4 large wholemeal tortillas

βοΈ 2 cloves of garlic, grated
βοΈ 1/2 tsp hot pepper
βοΈ 1 tsp sweet pepper
βοΈ 1 tsp cumin
βοΈ 1/2 tsp dried oregano
βοΈ 1 tsp chilli flakes

1οΈβ£ Cut the chicken into narrow strips, approx. 2 cm long and add to a bowl. Season with salt, pepper and all the spices. Pour in 1 tbsp of olive oil, mix thoroughly and set aside.
2οΈβ£ Cut the onion and pepper into thin slices. Season with a pinch of salt and sautΓ© in a frying pan in 1 tbsp of oil, then set aside on a plate.
3οΈβ£ Place the chicken in a hot pan and fry for a few minutes or until cooked. Transfer to a separate plate.
4οΈβ£ Heat a large frying pan and pour in 1 tbsp of olive oil. Place the tortilla on it and place 1/4 of the stuffing over half of it – chicken (without meat juices), sautΓ©ed vegetables, sweetcorn and grated cheese.
5οΈβ£ When the cheese is melted, use a spatula to lift up one side of the quesadilla & flip it over to the other side as if you were making an omelette (fold it in half!).
6οΈβ£ The tortilla should by now be browned slightly. If it is not browned, turn the heat up to high and flip the quesadilla over until browned.
7οΈβ£ Repeat with the other tortillas and the rest of the stuffing.
Serve with salsa, sour cream or guacamole!
