Healthier Gingerbread Cookies

Is there anything better than the smell of gingerbread at Christmas?! I’d eat these all year round; they’re so delicious!⁣ Here is my favourite, easy gingerbread cookie recipe!

You can make them really thin and crispy or slightly thicker, which makes them more crunchy. The recipe below makes 15 gingerbread man, if you want to make more, double the ingredients. They’re super easy to prepare, and I’m sure they’ll be a favourite with your friends and family!

If you’re trying to be mindful of your added sugar intake around Christmas time, first of all – that’s OK! Equally though, if you just want to relax and not think about it for a few days, that’s OK too.⁣ Life is about balance, and long-term health is about finding the balance that works for you.

I love a biscuit with a hot drink so I’m always looking for ways to modify recipes to reduce the sugar and saturated fat content, and I think this recipe hits the spot, it’s one of my favourites!

I hope you enjoy it as much as I do and of course, icing and toppings are optional .. but they taste delicious and are fun to do! ⁣

𝐈𝐍𝐆𝐑𝐄𝐃𝐈𝐄𝐍𝐓𝐒⁣ 👩🏻‍🍳 ⁣

✔️140g ground almonds⁣

✔️ 60g dates (3 Medjool or 10 dried)⁣

✔️ 1/8 tsp nutmeg⁣

✔️ 1/2 tsp ground ginger⁣

✔️ 1/2 tsp cinnamon⁣

✔️ 1/4 tsp baking powder⁣

✔️ 25ml vegetable or olive oil⁣

✔️ 1 tbsp/20g honey or maple syrup⁣

✔️ 1 egg white⁣

✔️ 1 tsp vanilla (optional)⁣

𝐌𝐄𝐓𝐇𝐎𝐃⁣ 🥣 ⁣

1️⃣ Preheat your oven to 150°C & add the ground almonds, dates, spices & baking powder into a food processor until combined.⁣

2️⃣ Add the oil, honey, vanilla (if using) and egg white and mix until a soft dough forms.⁣

3️⃣ Remove the dough from the food processor and flatten it between two sheets of greaseproof paper – roll out to be 3-7mm thick (the thinner the biscuit the crispier they are or the thicker the biscuit the crunchier and chunkier they are).⁣

4️⃣ Place the dough in the freezer for 20 minutes to firm up (don’t skip this step!).⁣

5️⃣ Cut out your cookie shapes (re-rolling the dough with any leftovers around the edges and continuing to cut) and pop onto a baking tray lined with baking paper before baking for 20-30 minutes until golden.⁣ You can use different Christmas cookie cutters such as snowman or reindeer!

6️⃣ Allow them to cool and enjoy! – I also added a couple of raisins to my gingerbread men before baking but feel free to ice them after too!⁣
