Healthy Apple Crumble

Instructions

  1. Pre-heat your oven to 200 degrees C and mix together the ground oats, protein powder (if using) and coconut oil. Then stir in the oats, cinnamon and 50g of the sugar alternative.
  2. Dice up the apples and pear into small pieces and add to a bowl along with the orange juice and 1 tbsp of the sugar alternative. Mix well before adding to a baking dish.
  3. Add the oat-crumble mixture to the fruit (sprinkle with desiccated coconut if using) and bake for 20-25 minutes (or until golden).
  4. Serve with natural yoghurt or custard and enjoy!

Notes

*To make a protein version of the crumble simply use 80g oat flour (choose gluten free if you need it) and 40g unflavoured whey protein. This makes each serving 377 calories, 21g fat, 40g carbs (lower in carbs) and 13g protein (higher in protein).

**You could use butter or another oil – I warmed my coconut oil in the microwave for a minute or so. Check out my blog post on fats for more information!

***I used 50g of Sukrin Gold (an amazing calorie free brown sugar alternative!) but if you’re using a sweetener such as Truvia then you may need to use less as this is sweeter. You could also use a sweetener such as coconut sugar however this would (obviously) increase the sugar content of the overall dessert.
