Oaty Chicken Goujons

The Internet is great for finding new recipes and so when I came across Nairn’s Oatcakes Website I fell in love with their creative recipes. I thought I’d blog my favourite starting with Oaty Chicken Goujons & Sweet Chilli Salsa.  This recipe stood out as I’ve never made my own ‘chicken dippers’ and it looked like a healthy, simple and fun dish to try.

 

I have to say that this really was one of the most delicious meals I have ever tasted.. and it’s super healthy too. You can serve this dish as a starter or as a main course with sweet potato wedges.. it’ll go down a treat I assure you!

 

Oatcake Chicken Goujons

Ingredients

  • 350g boneless, skinless chicken breast fillets*
  • 2 tbsp plain flour
  • 100g oatcakes**
  • 1 tsp chilli powder
  • 1 large egg, beaten
  • 1 tbsp olive oil OR spray oil

Instructions

  1. Preheat the oven to 190°C, (fan oven 170°C) or Gas Mark 5
  2. Lightly rinse the chicken breast, pat dry and cut into long, thin strips
  3. Place the oatcakes in a food processor and whiz until crushed. Add the chilli powder (to any plain oat cakes) and whiz for 10 seconds, then place on a large plate or in a polythene bag/bowl
  4. Place the flour on a separate plate and the egg in a shallow bowl. Roll the chicken strips (x 16) in the flour, then dip in the egg, allowing any excess to drip back into the bowl and then into the crushed oatcakes until thoroughly coated
  5. Place the chicken pieces on a non-stick baking tray and drizzle with the oil or spray
  6. Cook in the preheated oven for 15-20 minutes or until thoroughly cooked and the coating is crisp and golden
  7. Once cooked, serve with lettuce leaves, lime wedges, salsa & sweet potato wedges

Notes

*Chicken can be swapped for turkey breast

**I used 2 different types of oat cakes for variety – plain & red pepper flavour!

    These were absolutely gorgeous! I’m not a fan of chicken on its own as I get bored and this was the perfect addition to my dinner. Thanks Nic

    Just made these with turkey, and added sweet red pepper nairn oat cakes, paprika, herbs and seasoning. They were so yummy!! I had the goujons with cous cous, salad and tatziki, delicious! Thanks Nic x

    Made these this afternoon and used chargilled spices & Moroccan spices. They were so quick & easy to make and very very YUMMY!
    Serving them tonight with sweet potaote wedges and salad.

    Amazing! Used plain rough Nairns (got a massive box in Poundland!) with some chilli powder mixed in. Served with spinach, avocado and a bit of sweet chilli dipping sauce. Want to try with sweet potato and maybe a healthy version of baked beans! Know any recipes, Nic?

      Hi Jenni! Thanks for your great comment. Baked beans aren’t exactly bad for you really (reduced salt/sugar versions are available), but I am working on a bean burger recipe so look out for that! I LOVE sweet potato too, and eat it nearly every day! Nic xx

    Tried these today really enjoyed them tastey and healthy I made them with sweet potato chips spinach salad and greek yoghurt mint dip even the kids who are very fussy eaters enjoyed them.

    Just finnished eating these! I made mine with chilli flakes, a bit of paprika and salt & pepper. I served it with a salad and it was very tasty. Another lovely recipe from Nic 🙂

    Made these last night for the family. Went down well with everyone. Easy to make and really tasty. Can add anything you want to the topping to add flavour. Excellent
