These 4 ingredient energy ‘bliss balls’ taste amazing.. and I challenge you to stop at only having one .
This recipe is an easier (it has fewer ingredients!!) version of my ‘No Bake Healthy Chocolate Truffles’ and they are even more like the classic Nakd Bars – which are made from just fruit & nuts! They make a great snack for before a work-out, inbetween meals or for a light dessert when you’re craving something sweet and are packed with fibre and healthy fats.
If you use whey protein then you can also add a scoop of that to the mixture (and leave the balls free-from desiccated coconut as it just won’t stick!) which would then mean that they would make an ideal post-workout treat too!

- 1/4 cup (50g) dried apricots
- 1 cup (155-160g) medjoul dates*
- 1/2 cup (70g) nuts - I used cashew nuts
- 2 tbsp cocoa
- Optional - 1 scoop whey protein**
Optional Chocolate Coating: 4 tbsp cocoa, 3 tbsp coconut oil (melted) and 3 tbsp honey plus desiccated coconut for rolling in.
*If you’re using regular dates make sure to soak them first & make sure glucose syrup isn’t on the ingredients list.

Add the cashew nuts into a food processor and blitz until crumbled before adding the dates and apricots. Blend until combined before adding the cocoa.
Roll up golf-ball sized amounts of the mixture into ball shapes, before rolling in desiccated coconut (optional) and placing on a plate covered in grease proof paper (and popping in the fridge) OR add 1 scoop of whey protein, blend again in the food processor and then roll them up, leaving them plain (adding the protein powder means that the desiccated coconut will only stick if you do step 3!) and store in the fridge.
Optional: Mix together the melted coconut oil with the honey and cocoa and after your protein truffles have been chilling the fridge for about 30 minutes roll them in the home-made chocolate - use 2 cocktail sticks to push them around in the home-made chocolate mixture before lifting out and placing back on a plate lined with baking paper - store in the fridge or freezer until set.
