Healthy Protein Fudge

These healthy protein fudge bites are perfect to satisfy a sweet craving and thanks to the protein they should help you to feel fuller for longer!

 

You can easily double the mixture to make more and store them in the fridge or freezer for later.

The lighter coloured pieces in the pictures were made with ground almonds, & the darker pieces were made with PPB!

Healthy Protein Fudge

Ingredients

  • 1 slightly heaped tbsp melted coconut oil*
  • 1/2 tbsp runny honey
  • 2 tbsp protein powder
  • 3 tbsp ground almonds/PPB**
  • Optional: Raisins or Desiccated Coconut

Instructions

  1. Mix together the melted coconut oil, honey, protein powder & ground almonds/PPB until you get a smooth dough-like consistency (add a touch more oil/honey if your mixture seems dry)
  2. Press the mixture into an ice-cube tray - making 4-6 individual bites (I made 5!)
  3. Freeze for at least 15 minutes before enjoying or storing in the fridge or freezer for later!

*You can buy coconut oil from some supermarkets or online e.g. from MuscleFood – use code NIC5 for 5% off!!

**PPB stands for Powdered Peanut Butter, you can read my product review for more information and can buy it from Amazon! If you are allergic to nuts you can use ground flaxseeds!

 

Nutrition stats shown are for using ground almonds, making 5 pieces of fudge.. if you use PPB they are 55 Kcal, 3.8g carbs, 3.6g protein & 3.4g fat each!

These heart fudge pieces below used PPB & had added raisins in them & the rectangle ones were made using ground almonds & desiccated coconut.. yum!!

    Finally managed to track down some Coconut Oil and made these this evening but using Chocolate flavoured Impact Whey powder from Myprotein and they are seriously good.
    I needed to add a little extra honey but not much. They will definitely go in the treat box.

    Could you use 2tbsp ground almonds & 1tbsp of peanut butter to get the flavour? As I don’t have any PPB.

      I haven’t tried Beth so sorry! You can get coconut oil from Tesco/Asda for £2.50 though if this helps 🙂 x

    I trrided making Protein Fudge before and it just didn’t go well and didn’t tast good, but this respiie is fab!! so simple, takes mintins and tast lush. All the lads at work went ‘Nuts’ for it 😉 can’t wait to try it will PPB!!

    I also wanted to ask Nic with out sounding stupied, the Nutritional Info when its says a serving ( for the Fudge) what is calassed as? is it one piece?

      Mmm you could experiment with more of the nuts.. or swap for coconut flour perhaps.. or oat flour.. but add flavouring such as cocoa, vanilla or cinnamon 🙂 or you could use skimmed milk powder – do let me know!

    Nic, I know your recipes are lovely and easy (I’ve tried and enjoyed a few now) but somehow I’ve done something wrong with my attempt at this one!
    My mixture went REALLY runny :-/ wonder what on earth I did wrong with such an easy mix lol
    Anyway I’ll try it again later 🙂

    This recipe is great and so quick! It’s probably quicker to make these than go to corner shop when you want a treat!
    Have made lots of variations;
    Chocolate whey with PPB
    Chocolate orange whey with chocolate PPB
    Vanilla whey with PPB topped with dark chocolate, coconut and agave
