Healthy Meat-Free Cooked Breakfast with Quorn™

Over the festive period it can be nice to treat ourselves with a cooked breakfast, and even more so if you plan on going on a winter walk or if you know that your lunch is going to be later than usual.

 

If you’re anything like me though and prefer to spend any extra calories on festive chocolate and roast potatoes rather than breakfast then this recipe is for you.. it’s simple, warm, delicious AND slashes the calories of a regular cooked breakfast.

 

A traditional English Breakfast comes in at over 800 calories, where as this breakfast recipe is just 380 calories. By choosing meat-free alternative such as Quorn Meat-Free Sausages you keep the muscle building, satiating protein* but lose the extra calories that usually come with traditional pork sausages; the meat-free sausages contain just 142 calories for two.

 

I’ve also used spray oil in this recipe (you can put olive or rapeseed oil into an oil mister or use coconut oil cooking spray if you like it!) and have chosen to serve this breakfast with just half a seeded roll and three different types of veggies – all to keep the calories low but taste high!

Ingredients

  • 2 Quorn Meat Free Sausages*
  • 1 egg
  • 1/4 beef tomato
  • 2 mushrooms, sliced
  • handful of spinach
  • 1/2 seeded roll (& butter if required)
  • spray oil for the pan

*I get my sausages from the chilled section of the supermarket.

Method

Step 1

Spray a large frying pan with oil and pop in the sausages. Keep turning for 8 minutes or until cooked. In the same pan crack in your egg and allow to cook, along with the sliced mushrooms, beef tomato and spinach - cook until wilted.

Step 2

Toast the halved seeded roll, butter if desired and pop on a plate topped with the egg. Add your sausages and veggies to the plate.

Step 3

Enjoy! - adding some black pepper and tomato ketchup is optional ;)
