Healthy Apple Crumble with Oats2015-09-15

I’ve been meaning to make a healthy apple crumble recipe ever since I started blogging (which was over 3 years ago now!!). Good things come though to those who wait and I am REALLY happy with how this guilt-free dessert recipe turned out!!
Apple crumble is such a comfort food and given that we seem to have been well and truly thrown into the Autumn season this dish would not only be perfect served with yoghurt (as pictured) but with custard too on a cosy night in!
This recipe tastes so indulgent yet is bursting with fruit and oat goodness (I’ve even included a protein crumble version too!) and it contains NO ADDED SUGAR (thanks to using an amazing product from Sukrin!) .. the only sugar in this recipe is naturally occurring from the fruit which is slow release and comes with fibre, vitamins, minerals and antioxidants!

- 120g ground oats/oat flour*
- 70g coconut oil (melted)**
- 50g rolled oats + 1 tsp cinnamon
- 50g sugar alternative***
- 3 eating apples & 1 pear
- juice of 1 orange/2 satsumas
- 1 tbsp sugar alternative as above
- Optional: Desiccated coconut for sprinkling
*To make a protein version of the crumble simply use 80g oat flour (choose gluten free if you need it) and 40g unflavoured whey protein (I used Protein Dynamix – use NIC20 for 20% off too!). This makes each serving 377 calories, 21g fat, 40g carbs (lower in carbs) and 13g protein (higher in protein).
**You could use butter or another oil – I warmed my coconut oil in the microwave for a minute or so. Check out my blog post on fats for more information!
***I used 50g of Sukrin Gold (an amazing calorie free brown sugar alternative!) but if you’re using a sweetener such as Truvia then you may need to use less as this is sweeter. You could also use a sweetener such as coconut sugar however this would (obviously) increase the sugar content of the overall dessert.
Pre-heat your oven to 200 degrees C and mix together the ground oats, protein powder (if using) and coconut oil. Then stir in the oats, cinnamon and 50g of the sugar alternative.
Dice up the apples and pear into small pieces and add to a bowl along with the orange juice and 1 tbsp of the sugar alternative. Mix well before adding to a baking dish.
Add the oat-crumble mixture to the fruit (sprinkle with desiccated coconut if using) and bake for 20-25 minutes (or until golden).
Serve with natural yoghurt or custard and enjoy!
