Greek Yoghurt Healthy Pancake Recipe

If you’re after a super quick and simple yoghurt based pancake recipe that gives you the most delicious, high protein and healthy pancakes (where you can eat an entire batch of them for breakfast guilt free) then look no further!

 

I decided to use Greek Yoghurt in this recipe as I wanted to create a pancake stack that was naturally high in protein (and didn’t use protein powder or bananas like in my American Style Protein Pancake Recipe) and that tasted DELICIOUS.

 

Total Greek Yoghurt:

  • Is 100% natural – with no additives or preservatives
  • Contains only milk & live culture – It takes 4 litres of milk to make 1 litre of Total Greek Yoghurt!
  • Has a high amount of protein per 100g – Total 0% Greek Yoghurt has 10.3g protein per 100g!
  • Comes in either 0%, 2% and Classic 5% fat options
  • Is made authentically in Greece
  • Is ideal for making pancakes with or as a low calorie replacement for mayonnaise, cream and creme fraiche

Greek Yoghurt Pancakes

This Greek Yoghurt Pancake recipe is one of the most popular recipes on my blog; I'm sent pictures of it every week on Facebook, Twitter & Instagram! Do tag me if you post a picture too 🙂

Ingredients

  • 2 eggs
  • 40g oat or buckwheat flour*
  • 100g Greek Yoghurt**
  • Extras: 1-2 tsp of Stevia, Cinnamon, Honey, Xylitol or Vanilla***
  • Oil for cooking****

Instructions

  1. Add your eggs, oat flour, greek yoghurt and extra flavours (I used 1 tsp of vanilla & 2 tsp of stevia, which is a natural sweetener) to a bowl
  2. Whisk until light & fluffy - I used an electric whisk
  3. Heat your pan on a medium heat, with your oil, and pour in small amounts of the mixture (to create my pancake stack I cooked 2 small pancakes in the pan for the base and then cooked batches of 3 pancakes per pan for the rest of the pancake stack!)
  4. Cook each pancake for 2-3 minutes before flipping with a spatula and placing on a plate once cooked - repeat until you have none of the mixture left
  5. Stack your pancakes in a pile (my choice) and top with your favourite toppings! I chose more Greek yoghurt, banana, frozen berries, cinnamon & cacao nibs!

Notes

*To make oat flour simply blend rolled oats (porridge oats) in a blender for a few seconds. I make a big batch of oat flour at once and store it in an air-tight jar! 

**I used 0% fat Total Greek yoghurt

***You can get stevia & xylitol, which are healthier alternatives to sugar, from health food shops & supermarkets

****I use coconut oil or rapeseed oil, along with a non-stick pan!

      Coconut flour is a strange one as it absorbs lots of liquid – can you use gluten free oats? or maybe add a touch of milk if you use coconut flour. Let me know how they go!

    Nic these were lovely! So light! I halved ingredients and got 3 decent sized pancakes from it. Had with fresh figs and agave syrup! Plus, my boyfriend can eat as he doesn’t like bananas (so wont eat the other pancake recipes!)

    Well these were absolutely amazing !! I halved the ingredients to make just 1 portion, also added dark chocolate chips to the mix which made them extra yummy! Had them with a side of honey’d Greek yoghurt, grapes & apricots and it was delicious 😀 highly recommendable & these will definitely be on my breakfast menu on a regular basis.     Doubled this recipe up this morning to make a delicious stack of pancakes to feed 3. Big bowl of mixed berries and some low fat coconut yoghurt on top. So easy to make and so tasty and filling, will have to make this a Sunday morning tradition! Thanks Nic X

    Gorgeous brekkie – gave me a proper fuelling before kettlebells. I didn’t have any oats but did have some rice flour kicking about. Worked perfectly, and gf to boot! I put a little too much mixed spice in, but otherwise was lush with apple compote and melon. Thanks Nic, quick, easy and nutritious! 🙂

    Love this recipe Nic! I am calorie counting . My hubby, who is a fitness instructor, and 14 year old son, both need loads of cals. This recipe suits us all! I have it as per your recipe with just fruit toppings. For the boys, I add sultanas, seeds & honey to the batter & then top with extra yog, loads of fruit & more seeds. We all love them! Perfect weekend brunch (although hubby had me making them at 7.30am today so he could have them before his double fitness session this morning!).

    I’m a total convert to Nichola’s overnight oats, so when I saw this recipe with the same ingredients (plus eggs!) I thought I just have to give it a go!
    I made my own oat flour by putting porridge oats in the blender and off I went! It’s such an easy and quick recipe and really feels indulgent but without the guilt! My kids loved them too which is always a bonus. They had strawberries and honey on theirs, I had strawberries, blueberries and a blob of greek yoghurt.
    A fantastic Sunday breakfast!

    I’ve made a few types of protein pancakes before and found most of them weirdly dense and unpalatable. I LOVE Total Greek so gave these a try. I don’t have a blender so I used oat bran – not sure if this is the same as oat flour but it seemed to work. They’re SO fluffy, which is mad considering there is no raising agent. My best attempt at them was when I put some raspberry in the pancake mix, them topped with sliced banana and drizzled over PB2 (which you can get off Amazon). Nic never disappoints!

    Hi Nic. We’ve just had these as it’s pancake day and they were delicious. I served them with strawberries, blueberries, mango, quark sweetened with stevia and some vanilla extract and some choc shot drizzled over the top.     Ok Nic, I am a self-confessed pancake fiend & few recipes make the cut (not even Nigella’s). But these were a total winner – I really couldn’t believe how healthy they were. I added 1 tsp cream of tarter & 1/2 tsp bicarbonate of soda as my mix wasn’t very fluffy and it worked well. I used Flavahans multi seed porridge oats for added omega 3 & used the attachment on my hand blender, it’s a great idea, I’ll now be adding oat flour to everything! I also added 2 tbsp Stevia blend but I think one would be fine. Mixed with cinnamon & vanilla, served with more Greek yogurt, grapes, 1/2 banana, no-sugar berry compote, a sprinkling of raw cocoa/cacao & some walnuts (maybe a bit OTT on the toppings). I’ll tweet you a pic next time. Thanks again!

    Hi Nic, can I make these in batches and freeze them or make a large amount of mixture and keep it in the fridge? I have busy mornings with 2 small children and trying to get to work, these really fill me up and give me loads of energy but I don’t have time every morning to make them from scratch.     Hi Nic, just a note to say that I already LOVE your Overnight Oats recipe (it’s caught on at work big style when they see how quick and lovely they are – I leave them in the work fridge overnight) and wanted to try these as a change from my usual poached eggs and salmon. They were amazing! My NutriBullet milling blade made the flour in seconds, I think I’ll try them with extra linseed next time. Reckon a spirulina version with blueberries would go down VERY well with little ones as Monster Pancakes, what do you think?!

    Made these this morning and they are amazing! Best healthy pancakes I’ve tried. I added 2 tsp agave nectar for the sweetener which worked well and used the nutribullet to mix. So quick and easy!

        Hi Nic – Well I have good news 🙂 I wrapped the cooked pancakes individually in cling film & froze them. This morning I simply took out the amount I needed … and put them, still frozen, in the toaster for a minute or so. The result … hot, fresh, crispy on the outside fluffy in the middle delicious pancakes 🙂 Double batch here I come 🙂

    I found this because having run out of milk I was searching for a pancake recipe using Greek yoghurt – it was perfect with blueberries, mandarins and banana. I omitted any sweetener in the mix and added locally produced honey to the fruit – so yummy
