First came cauliflower pizza.. then came courgette pizza boats!
This super healthy recipe is simple to put together and makes an ideal snack or light lunch. It’s high in both protein and fibre which will help to keep you feeling fuller for longer and it’s literally bursting with goodness from the vegetables (it contains 2-3 of your 5 a day!!).
This recipe makes 2 courgette pizza boats (from 1 courgette) which is ideal as a snack.. I actually doubled this recipe for lunch and found it super satisfying!

- 1 courgette (approx. 150g)
- 45g light mozzarella
- 15-20g tomato pizza topping*
- vegetables e.g. mushrooms & tomatoes
- basil & black pepper
*I used sundried tomato paste instead.
Pre-heat your oven to 175 C, wash the courgettes, slice off the ends & slice length ways down the middle to create two halves. Optional: scrape out some of the flesh from down the middle so the vegetables/cheese sinks in.
Spread the courgette halves with tomato paste and top with the mozzarella and vegetables.
Sprinkle over basil & black pepper and bake for 30 minutes in an oven proof baking dish.
Serve & enjoy!
