4 Ingredient Bliss Balls

  1. Add the cashew nuts into a food processor and blitz until crumbled before adding the dates and apricots. Blend until combined before adding the cocoa.
  2. Roll up golf-ball sized amounts of the mixture into ball shapes, before rolling in desiccated coconut (optional) and placing on a plate covered in grease proof paper (and popping in the fridge) OR add 1 scoop of whey protein, blend again in the food processor and then roll them up, leaving them plain (adding the protein powder means that the desiccated coconut will only stick if you do step 3!) and store in the fridge.
  3. Optional: Mix together the melted coconut oil with the honey and cocoa and after your protein truffles have been chilling the fridge for about 30 minutes roll them in the home-made chocolate - use 2 cocktail sticks to push them around in the home-made chocolate mixture before lifting out and placing back on a plate lined with baking paper - store in the fridge or freezer until set.
  4. Enjoy whenever your chocolate craving kicks in!

Notes

*If you’re using regular dates make sure to soak them first & make sure glucose syrup isn’t on the ingredients list.
