Chocolate & Raspberry Protein Muffins

When you get used to eating copious amounts of chocolate/chocolate every day over Christmas I for one cannot just go cold turkey… I have to be weaned off gradually and for me these delicious chocolate muffins really help (even though they actually contain no ‘chocolate’ per se!).

 

The texture of these protein muffins is light and they are so moist thanks to the yoghurt and apple sauce. They really do taste like ‘the real thing’ and help to satisfy those chocolate cravings!!

 

Protein helps us to feel fuller for longer and each delicious chocolate muffin provides 10g of protein (thanks to the Greek yoghurt and whey) in less than 130 calories. These muffins are a great pre or post workout snack to replenish energy and protein stores. I used chocolate brownie protein powder from Protein Dynamix in this recipe (use the discount code NIC20 for 20% off – you may have to log in first to use the code!), but if you don’t have any whey protein they you can always try low calorie hot chocolate powder instead!

Chocolate Muffins

 

Chocolate & Raspberry Protein Muffins

Ingredients

  • 165g (1 cup) oat flour (ground oats)
  • 30g (1/4 cup) cocoa powder
  • 90g (3 scoops) chocolate whey protein*
  • 1.5 tsp baking powder
  • 0.5 tsp baking soda
  • 3 egg whites
  • 140g (heaped 1/2 cup) 0% greek yoghurt
  • 250g (1 cup) no added sugar apple sauce**
  • 40g (2 tbsp) runny honey
  • 1 medium banana, mashed
  • For toppings: Raspberries

Instructions

  1. Pre-heat your oven to 175 degrees C before combining the dry ingredients in a bowl: oat flour, cocoa, protein, baking powder and baking soda.
  2. Combine the wet ingredients into another bowl: egg whites, yoghurt, apple sauce, honey and banana.
  3. Combine the wet and dry ingredients together.
  4. Pour the mixture into greased muffin trays or into silicone muffin trays (oats have a tendency to stick!) - about 1/2 to 3/4 full. Add a raspberry on top (push it down slightly into the muffin mixture).
  5. Bake for 20 minutes and then allow to cool before enjoying immediately or storing in the fridge for later!

I use protein powder in some of my recipes to increase the satiating effect of them (leaving you feeling fuller for longer!). If you don’t have protein powder try low calorie hot chocolate powder instead!

I’ve just purchased the dynapro anytime vanilla ice cream flavour after watching your YouTube video and I must say it is the best protein powder I have EVER had !! 🙂 Thanks for the recommendation! I’ve just ordered the chocolate brownie flavour but I accidentally ordered the dynapro lean instead of the dynapro anytime … Do you think I could still make the muffins with the dynapro lean powder ? x

    These look lush – do you know if you can substitute the honey for maybe xylitol or stevia to bring down the carbs slightly?
