Bircher Muesli Recipe

Bircher muesli is naturally sweet and tastes delicious. It’s also great for your energy levels as it has a low glycaemic index (keeps you going for longer), is high in soluble fibre (helps to reduce cholesterol) and is packed with vitamins and minerals.

Bircher Muesli was originally created by a Swiss doctor, Dr.Bircher-Benner, who wanted to create a highly nutritious breakfast for his patients. Soaked over night, the ingredients become much more easy to digest which helps to increase nutrient absorption.

Here’s my take on the traditional Bircher Muesli Recipe.. and if you want a version that is less sweet, check out my overnight oats or overnight oats with chia seeds!

 

Bircher Step by Step

 

Bircher Muesli

Bircher muesli is naturally sweet and tastes delicious. It’s also great for your energy levels as it has a low glycaemic index (keeps you going for longer), is high in soluble fibre (helps to reduce cholesterol) and is packed with vitamins and minerals.

Ingredients

  • 1 large apple - 1/2 grated & 1/2 thinly sliced (latter is optional)
  • 3 chopped dried apricots
  • 40g (~1/2 cup) oats*
  • 160ml (~2/3 cup) milk - I use skimmed, soya or almond milk
  • 1/4 teaspoon ginger or cinnamon
  • Optional: honey, fresh fruit, 0% fat Greek yoghurt

Instructions

  1. Mix the grated apple in a bowl with the ginger/cinnamon, oats, apricots and milk
  2. Cover and leave in the fridge over-night
  3. The next day simply top with a dollop of Greek yoghurt and banana OR....
  4. Spoon the bircher muesli into a cup followed by a drizzle of honey and a slice of apple.. then repeat until you have a beautiful glass filled with delicious goodness!!

    Loved this, I fiddled with the recipe for a change and made it with the oats & apple but used Alpro coconut milk, desiccated coconut, a bit of dried pineapple and some lime zest. Gorgeous!

    I love Bircher muesli but it can be a bit calorific when eating out from a shop or in a restaurant. So I will definitely try this!!! X

    Tried this but instead of milk as the main bit, used fat free natural yogurt, about 100g with 50ml almond milk, so it’s kinda like the overnight oats. Did apple, ginger and pear. Big noms
